Pancake

My outpatient office is located right next door to an IHOP, and whenever I take the bus home I walk by and think about eating IHOP for dinner. Finally I decided that it made more sense to take an earlier bus and eat breakfast there before work. Genius except it never seemed worth it to actually wake up earlier until I would be walking by in the morning with no time to spare. Today was my last day with Dr. B and with it, my IHOP breakfast dream dies. Naturally, I craved pancake all day and all afternoon and almost ran out for bisquick mix until I found this simple little recipe online. I had all the ingredients! Me, the one who doesn't bake and barely cooks. They were light, fluffy, simple and delicious so I'm sharing the recipe. Don't worry, over 1,000 people agreed on allrecipes.com.

1.5 cups flour
3.5 tsp baking powder
0.5 tsp salt
1 Tbsp sugar

1.25 cups milk
1 egg
3 tablespoons butter

Mix the dry ingredients and the wet ingredients separately. Then dig a little hole in your dry mound, pour the wet in and stir. I cut the ingredients in half and added some choco chips because somehow the non-baking non-cook had some in the pantry. Better than bisquick if I do say so myself. Enjoy!
